This strand is called the chalaza, and it is a normal part of the egg’s anatomy. Its main job is to act like an anchor to keep the yolk centered safely inside the egg white. Every egg has two of these hidden support strands, but usually only one is visible when cracked open.

The appearance of the chalaza is a direct clue to the egg’s age. In fresh eggs, the strand is thick, firm, and easy to see. As an egg gets older, the chalaza naturally thins out and disappears, meaning a noticeable strand is proof of a high-quality, fresh egg.

Because the chalaza is made of the exact same protein as the egg white, it is 100% safe to eat. You do not need to remove it before cooking. It will blend right in with the rest of the egg without changing the taste or the texture of your food.
