What Are Capers? A Complete Guide to This Tangy Mediterranean Favorite

Capers are small, unopened flower buds harvested from the caper bush (*Capparis spinosa*), a hardy plant native to the Mediterranean region. Although tiny in size, they are known for their bold, salty, and tangy flavor that adds depth to a wide variety of dishes. Fresh capers spoil quickly after harvesting, so they are almost always preserved before reaching grocery stores, making them a convenient pantry staple for home cooks around the world.

Most capers are preserved in either brine, vinegar, or coarse salt, which helps maintain their flavor and extend their shelf life. Before using salt-packed capers, they should be rinsed thoroughly to remove excess salt, while brined capers can also be lightly rinsed if a milder taste is preferred. Their unique combination of salty, sour, and slightly floral notes makes them an excellent ingredient for balancing rich or savory foods.

Capers are commonly used in Mediterranean and Italian cuisine and appear in classic dishes such as chicken piccata, pasta puttanesca, smoked salmon platters, salads, seafood recipes, and flavorful sauces. They can be stirred into pasta, sprinkled over roasted vegetables, mixed into dressings, or blended into dips to provide a bright burst of flavor. Because of their intense taste, only a small amount is usually needed to enhance an entire dish.

In addition to their distinctive flavor, capers contain antioxidants and small amounts of vitamins and minerals, making them a nutritious addition to many meals. Their long shelf life, versatility, and ability to complement meats, fish, vegetables, and pasta have made them a favorite ingredient in kitchens worldwide. Whether you’re trying them for the first time or expanding your cooking repertoire, capers are an easy way to bring authentic Mediterranean flavor to everyday recipes.
