Some of the most delicious and popular foods in cuisines around the world can pose a risk if they are eaten raw or undercooked. These include freshwater crabs and crayfish, frog legs, freshwater fish, and certain aquatic vegetables. Under certain conditions, these foods can carry larvae or parasites that may cause infections in humans.

Freshwater crabs and crayfish can carry parasites associated with lung infections, while undercooked frog meat can transmit *Spirometra* larvae. In rare cases, these larvae can migrate into different tissues of the body and cause serious health problems. Therefore, marinating food in lemon juice, vinegar, alcohol, or sauces should not be considered a substitute for thorough cooking.

Freshwater fish that is eaten raw, lightly smoked, or inadequately prepared may also contain parasitic worm larvae. Some of these parasites can establish themselves in the intestines and, in certain cases, affect vitamin B12 absorption. Meanwhile, aquatic vegetables such as watercress can become contaminated with parasites if they are grown in contaminated water and consumed raw.

Fish intended to be eaten raw should have been handled and frozen according to appropriate food-safety standards, while meat and vegetables should be prepared safely.
