Finding strange purple blotches on thawed chicken can be alarming, but it is often completely harmless. One common cause is bone marrow leakage, which happens when freezing damages the bone tissue of younger chickens. As the meat thaws, dark pigments seep into the surrounding areas, creating reddish-purple stains.

Another natural cause is myoglobin, a muscle protein that stores oxygen. Freezing and thawing can alter how this protein looks on the meat, sometimes creating darker patches. Because dark meat naturally contains more myoglobin than white meat, these color shifts are completely normal and do not mean the chicken is bad.

To tell the difference between harmless color changes and actual spoilage, look for other warning signs. Spoiled chicken will have a sour or ammonia-like smell, a slimy or sticky texture, or a dull gray or green color. If the chicken smells fresh, feels firm, and was thawed safely, it is usually fine.

When cooking blotchy chicken, always ensure it reaches a safe internal temperature of 165°F (74°C), and you can trim away the dark spots if they bother you. To keep your food safe, remember to always thaw chicken in the refrigerator or using cold water rather than leaving it out on the counter.
