11 Foods You Should Never Put in a Slow Cooker

Slow cookers are convenient, but not every ingredient belongs in the crock. Knowing what to add—and when—can prevent dry meat, mushy textures, separated sauces, and disappointing meals. Alcohol can also retain more of its strength and flavor in a slow cooker, so it is better cooked briefly on the stovetop first.

Other ingredients are best added late. Leafy greens should go in during the final few minutes, while bacon, fried onions, and croutons should be added just before serving to keep them crisp. Also, remember that slow cookers lose very little liquid, so using too much can leave your meal watery. “Resist the Peek” is another useful rule because lifting the lid releases heat and steam.

For better results, cook on LOW when possible, place dense vegetables near the bottom, and avoid unnecessary lid opening. With a few simple habits, slow cooking becomes easier, safer, and far more reliable—helping you turn basic ingredients into satisfying meals without the usual kitchen mistakes.
